Key information

Green tools are our general-use tools. These have either been demonstrated or explained in your New Member Induction, or are safe for use after a demonstration by a technician. Always ask a member of staff before using any green tools for the first time, or if you are not sure how to use these safely.

Induction hobs feature a high-frequency electromagnet creating a magnetic field between the cooktop and the pan. This then penetrates the iron in pans, essentially creating heat energy inside of them.

This precision hob allows users to set and maintain exact cooking temperatures between 30°-250°C.

  • A sensor in the glass surface directly measures its surface temperature.
  • A probe thermometer attachment to precisely control the temperature of both water and fat-based liquids.
  • The Intensity function allows control over the rate at which the ideal temperature is met.
  • A Create function stores frequently used custom temperature profiles for one-touch recall.
  • The timer runs up to 72 hours with Repeat, Continue, Keep Warm and Stop Cooking functions

What can I use this tool for?

Precise cookery of liquids e.g. sauces, sugarwork, cheese or tofu making, and for poaching in water-based liquids or deep frying in oil.

The integrated probe can also be used in thermometer mode to monitor the core temperature of solid foods like steaks, cutlets, and fillets in a frying pan.

The heat intensity control allows you to adjust the intensity while keeping the temperature moderate and constant, reducing the need for a double boiler for tasks like making hollandaise, citrus curd, or tempering chocolate.

The create function enables you to save and name frequently used settings so that they can be recalled to get consistent results with tasks like toasting spices or making yoghurt.

What training do I need to use this tool?

Yellow tools require further training, by arrangement with a technician.
