Members Masterclass: Morning session - Sugar Glass

Join designer and gastronomer Fernando Laposse to explore sugar, as a material which can be moulded, slip-cast, welded, fused and even blown. This brittle transparent material is often used as a replica to glass, as it convincingly shatters just like glass. You have to work quickly; as it cools it will soften and lose it's brittle qualities.
Participants will learn about the different physical properties of sugar when it is cooked at varying temperatures, and will be able to ask questions about it’s properties: adding Cream of Tartar to the molten sugar prevents recrystallisation, but why is this necessary?
During this hot and fast-paced masterclass you will get a hands-on experience of sugar as a glass like material. Slip-cast some cups, blow a bubble, create a rotational mould, freehand shape, smooth, crack and smash it, and and master the art of welding sugar together.
