Join an immersive Culinary Seaweed Masterclass in our brand-new Experimental Kitchen. Chef Melanie McIntosh will reveal the fascinating world of British seaweeds through tasting, touching, and comparing different varieties and their unique attributes. We will also of course be cooking and eating them together. Participants will sample, compose and bottle their own flavour mixes, chop up some delicious seaweed salad, learn about dehydration and rehydration, and finally make their own special jar of furikake to take home. You will leave with a deeper appreciation for seaweed and a collection of recipes with which to continue your explorations.
Melanie McIntosh makes, eats and talks pickles and ferments with produce from around the UK and British Isles – using quite literally what’s surrounding the Islands: seaweed. She has worked on research & development projects and as a chef in Germany, Poland, New York and London, which she calls home. Melanie recently filmed a television show in Japan about the Japanese preservation technique called tsukudani. Her favourite result was made with seaweed, of course!
About the Experimental Kitchen:
The Experimental Kitchen at Institute of Making Stratford is a unique new facility for investigating edible materials, and this will be members' first chance to explore and work there, while helping the Institute of Making team to develop its capabilities together.
Important note: This masterclass is not suitable for anyone with a moderate or severe sesame allergy. Once your slot has been confirmed, you will be asked if you have any other food-related allergies or diatary requirements.
