Festival of Stuff: Culinary Seaweed Masterclass (Morning)

Join an immers­ive Culin­ary Sea­weed Mas­ter­class in our brand-new Exper­i­ment­al Kit­chen. Chef Melanie McIn­tosh will reveal the fas­cin­at­ing world of Brit­ish sea­weeds through tast­ing, touch­ing, and com­par­ing dif­fer­ent vari­et­ies and their unique attrib­utes. We will also of course be cook­ing and eat­ing them togeth­er. Par­ti­cipants will sample, com­pose and bottle their own fla­vour mixes, chop up some deli­cious sea­weed salad, learn about dehyd­ra­tion and rehyd­ra­tion, and finally make their own spe­cial jar of furikake to take home. You will leave with a deep­er appre­ci­ation for sea­weed and a col­lec­tion of recipes with which to con­tin­ue your explorations.

Melanie McIn­tosh makes, eats and talks pickles and fer­ments with pro­duce from around the UK and Brit­ish Isles – using quite lit­er­ally what’s sur­round­ing the Islands: sea­weed. She has worked on research & devel­op­ment pro­jects and as a chef in Ger­many, Poland, New York and Lon­don, which she calls home. Melanie recently filmed a tele­vi­sion show in Japan about the Japan­ese pre­ser­va­tion tech­nique called tsukudani. Her favour­ite res­ult was made with sea­weed, of course!

Import­ant inform­a­tion about our tick­et bal­lot for this event:

We are using a bal­lot tick­et book­ing sys­tem for this event. The bal­lot is open for a lim­ited time: from Tues­day 13^th May until 23:59 on Sunday 18^th May. Enter­ing into the bal­lot means that you have entered into a draw for the oppor­tun­ity to book a tick­et. Unfor­tu­nately, the bal­lot may be over­sub­scribed — enter­ing the bal­lot does not guar­an­tee a mas­ter­class slot. From Monday 19^th May onwards, suc­cess­ful entrants will be sent a book­ing link, which must be com­pleted with­in 24 hours in order to secure a ticket. Once all tick­ets are fully booked by the bal­lot win­ners, we will noti­fy every­one who signed up to the bal­lot, and offer the oppor­tun­ity to join the wait­ing list for last-minute dropouts.

This mas­ter­class is suit­able for ages 18+. No exper­i­ence or skill­set neces­sary, all welcome!

This work­shop is part of the Fest­iv­al of Stuff.
